• 1½ lb ground meat (80/20 beef, or 1 lb beef + ½ lb lean pork)

• 1 cup milk

• 1 cup breadcrumbs or panko

• 2 eggs

• 1 medium onion, finely diced or grated

• 3 cloves garlic, minced

• 1 tbsp ketchup

• 1 tsp salt

• ½ tsp black pepper

• 1 tsp smoked paprika (or regular paprika)

• 1 tsp dry basil

• 1 tsp ground coriander

• 1 tbsp Unami seasoning

Optional: Dijon mustard, fresh parsley

For the Glaze

• ½ cup ketchup

• 2 tbsp brown sugar or honey

• 1 tbsp aged balsamic vinegar

• Splash of apple cider vinegar (optional)


Instructions:

1. Preheat oven to 350°F (175°C).

2. Mix milk and breadcrumbs in a large bowl; let soak 1–2 minutes.

3. Add eggs, onion, garlic, ketchup, and spices. Stir gently.

4. Fold in meat just until combined.

5. Shape into a loaf and place loosely in a parchment-lined loaf pan.

6. Mix glaze ingredients and spread half over the loaf.

7. Bake uncovered for 30 - 35 minutes.

8. Add remaining glaze and bake 15 minutes more, until internal temperature reaches ~160°F.

9. Rest 10-15 minutes before slicing.
